Ingredients
- ½ lb Bacon, chopped fine
- ½ cup Flour
- Buttermilk biscuits, homemade or pre-packaged
- Eggs, Onion
- Butter, Milk
- Salt and Black Pepper to Taste
- Fried onion strings, French’s
- Cracked black pepper
- 1 lb Malone’s Mild and Hot Souse Meat
Instructions
- Sweat the onion in the butter until soft. Add in the bacon and cook to render. Add Malone’s Hot. When melted add the flour to combine.
- Add milk and bring to a simmer. Cook until the sauce thickens slightly—season with salt and pepper to taste.
- Halve warm biscuits. Spoon gravy on top of the bottom half of the biscuits. Add a slice of Malone’s Mild Souse Meat. Spoon more gravy on slices and cover with biscuit tops.
- Serve with a sunny-side-up egg, and top eggs with fried onion strings and cracked black pepper.
