Ingredients

  • ½ lb Bacon, chopped fine
  • ½ cup Flour
  • Buttermilk biscuits, homemade or pre-packaged
  • Eggs, Onion
  • Butter, Milk
  • Salt and Black Pepper to Taste
  • Fried onion strings, French’s
  • Cracked black pepper
  • 1 lb Malone’s Mild and Hot Souse Meat

Instructions

  1. Sweat the onion in the butter until soft. Add in the bacon and cook to render. Add Malone’s Hot. When melted add the flour to combine.
  2. Add milk and bring to a simmer. Cook until the sauce thickens slightly—season with salt and pepper to taste.
  3. Halve warm biscuits. Spoon gravy on top of the bottom half of the biscuits. Add a slice of Malone’s Mild Souse Meat. Spoon more gravy on slices and cover with biscuit tops.
  4. Serve with a sunny-side-up egg, and top eggs with fried onion strings and cracked black pepper.
