Maxie’s Southern Comfort
Ingredients
O | 1 cup Cornmeal |
O | ½ cup All Purpose Flour |
O | 1 tbsp Baking Powder |
O | 1 tsp Baking Soda |
O | ½ tsp Pepper, white |
O | 1 tsp Cayenne Pepper |
O | 1 tbsp Salt, kosher |
O | Combine above dry ingredients into a bowl |
O | 1 ½ cup Buttermilk, ¼ cup Canola oil |
O | ½ cup Corn kernels, ¼ cup Parsley, chopped |
O | 2 tbsp Chives Chopped, 1 Onion, grated |
O | 3 Eggs, beaten lightly, 1 lb Maloen’s Hot, diced small |
Directions
- Preheat fryer to 325 degrees. Combine the next ingredients.
- Add to the dry, continue to mix until blended. Test a sample and adjust the salt.
- Fold diced Malone’s into the batter. Scoop teaspoon size batter into the hot oil and fry until golden. About 4-5 minutes.
- Drain and serve with your favorite dipping sauce.
